Wednesday, January 04, 2006 I love fudge, especially homemade. In fact I am having a piece right now. It really turned out right this year for the holidays and I thought I would share my recipes. It is the marshmallows that makes it so creamy. When I was at home, Mom always said it was the stirring that made it creamy and smooth. I didn't work as hard on this fudge as I remember Mom and both turned out great.PEANUT BUTTER FUDGE
2 cups of granulated sugar
2/3 cup of evaporated milk (yes, can milk makes a difference)
2 cups of minature marshmallows
1 cup peanut butter (I think creamy is best)
1 teaspoon vanilla
Boil sugar and milk in a medium saucepan over medium heat, stirring accasionally but do not leave alone to boil for a long period of time. This should only be boiling for about 3 minutes. You can test for soft ball stage by dropping a dab in ice cold water. If it forms a soft ball, it is ready. Practice, you will soon get the idea of what it should look like in the pan. Remember to use medium heat and for about 3 minutes.
Remove from heat and add remaining ingredients, stir for about 1 minute or until the marshmallows have melted and there is a shine. Pour the candy into a greased pan and chilled until firm.
CHOCOLATE FUDGE

1 1/2 cups semi-sweet chocolate chips
1 teaspoon vanilla
1/2 cup chopped pecans or walnuts (optional)

This should only be boiling for about 4 - 5 minutes. You can test for soft ball stage by dropping a dab in ice cold water. If it forms a soft ball, it is ready. For both recipes I cut mine into squares and wrapped each piece individually with plastic wrap. It really didn't take as long as it seems and it makes it nice for gift giving.
